The artichoke (Cynara scolymus) belongs to the thistle family. While the size of the flower heads is the most valued and sought after feature in commercial cultivation of the artichoke, the plant's leaves are of equal importance for medicinal purposes. Active ingredients include the bitter substance cynarin, fatty acids, enzymes and vitamins.
